Like most people, Michael and I try to fit a lot into our week: full time careers, our grandparents in their 90’s, our new granddaughter, my pony and a workout at the gym. This can make for a late dinner. After a great workout at the gym, the last thing we want to do is buy junk food or pizza. Keeping the “shop the outside of the store” tip in mind I learned from a nutritionist, I stopped off at the produce section, specifically the salad area at Walmart. In addition to the usual salad fixin’s, I found this treasure:
It was bitter cold outside, so a warm dish of squash sounded so very nice. I could steam it in the bag for 3 minutes or roast it using the recipe on the back. I decided to modify the recipe just a bit by using Coconut Oil and Ghee in place of the unsalted butter.
